If a guest is e.g. lactose-intolerant, one needs to have on hand a nondairy creamer as well as substituting nondairy products in quiche, French Toast, etc. Others may be sensitized to citrus, i.e. no orange or grapefruit juice, substituting instead grape or apple juice. One of the most challenging restrictions has been a guest who was wheat-intolerant. Many assume you know what they want. Be wary of men making anniversary reservations at the last minute. They might just arrive, decide it's 'not what they wanted', and then cancel on the spot. Men in this situation sometimes don't think to tell you exactly what they're looking for. Sounds a bit silly, but you'd be surprised. If they've never been to your place before, you must be very specific about what you do or do not offer, and try to describe what your facility looks like, how it's decorated, and what kind of 'ambiance' you have; otherwise, you may end up with a no show. (They probably did the 'drive by' and kept on driving.) Anniversary and honeymoon bookings have their own idiosyncrasies, and will require you to be more on your toes.
